We would like to present you today a Cannellini beans cream with prawns and burrata cheese.

Boiled Cannellini Beans
Burrata cream
Spring Onion
Chili Pepper

Let's start with preparing the cannellini beans cream. I have already put the beans to soak for eight hours, then I let cooked them in water without salt for an hour and at last I added salt and some herbs. Now I remove the spices and some beans so to leave them whole as a garnishment, I will whisk all other beans with some of their cooking water with a pinch of salt and some extra virgin olive oil and
blend it all until you get a nice smooth cream.

Let's start now cooking the shrimp heating a pan with a dash of extra virgin olive oil and herbs of thyme and rosemary, some parsley to our pleasure and I suggest a little bit of chilli pepper with shrimps and beans. Let's add some onion and let it warm before laying our prawns with a pinch of salt and let it cook.

Once the prawns are cooked we remove them from heating and compose the dish.

Some spoons of cream on the bottom of the plate, it shall be hot but not too much, some of the whole beans we had kept aside to give a different texture, then drops of burrata cheese and finally our shrimps. And let's color the dish with the herbs we used to perfume the boiled beans: thyme, rosemary, parsley and spring onion.
A little extra virgin olive oil and cannellini cream, shrimp and burrata is ready.
